Winemaking

This wine is made with second fermentation, locally know as ''ripasso''. In January/February, the fresch, young vintage Valpolicella wine refrements on the still slightly-sweet Amarone skins. Aging in 30, 54 and 75 hectolitre barrels and 100 hectolitre concrete vats. Three months bottle-aging.

Tasting notes

Color : intense ruby red color

Nose : fruity notes of cherry and underbrush, enriched with sensations of spice and chocolate.

Mouth : tannin prevails in the mouth, with a meaty, savory palate.
